Shawarma Sandwich

Ingredients:

  • Chicken leg boneless cubes 1 kg
  • Yogurt 1 cup
  • Garlic 2 tbsp
  • Salt 1 tbsp
  • Oil 6 tbsp
  • Lemon juice 2 tbsp
  • Tomato paste 1/2 cup
  • Sliced Capsicum 2
  • Mushrooms broken 1 tin
  • Mozzarella cheese 700 g

Shawarma masala:

  • Cinnamon 1/2 tsp
  • Cloves 5
  • Black pepper powder 1 tbsp
  • Garlic powder 1 tbsp
  • Green cardamoms 6

Mix all ingredients and set aside.

For dough:

  • Flour 700 g
  • Salt 1 tbsp
  • Eggs 2
  • Yeast 2 tbsp
  • Sugar 1 tbsp
  • Oil 6 tbsp

Mix all ingredients and make a dough. Set aside to rise.

For Yogurt Tahini sauce:

  • Yogurt 1-1/2 cup
  • Tahini 1 cup
  • Salt 1 tsp

Mix all ingredient and set aside.

For Shawarma salad:

  • Onion sliced 1 large
  • Tomatoes 2
  • Cucumber 1
  • Parsley 1 bunch
  • Sumac powder 1-1/2 tsp
  • Salt 1 tsp

Mix all ingredients and set aside.

Culinary Process:

  • In a bowl add chicken, shawarma masala, garlic, salt, lemon juice, yogurt and mix. Let chicken marinate for 1 hour.
  • Cook chicken on high flame for 5 minutes. Add tomato paste and cook for 5 more minutes. let it cool down.
  • Mix the dough and set aside.
  • Spread the dough in a baking pan. Add chicken mixture, vegetables and cheese and cover with another layer of dough.
  • Put it in the oven and cook for 20 minutes on 225 centigrade.
  • Serve with sauce.
